Sarah Mathis
RD, CDCES

Ms. Sarah Mathis is a Registered Dietitian (RD) and Certified Diabetes Care and Education Specialist (CDCES) with 20+ years of experience in diabetes education. Sarah received her B.S. in Nutrition and Food Science, minoring in Science and Psychology, from Middle Tennessee State University and completed her dietetic internship at the University of Alabama at Birmingham.


After obtaining her RD, Sarah returned to Knoxville to work with a local family practice. She also conducted nutrition research at the University of Tennessee and spent 18 years working in both inpatient and outpatient settings at East Tennessee Children’s Hospital (ETCH). Sarah’s focus at ETCH was diabetes education for children and families with type 1 and type 2 diabetes. Sarah joined the ECET team at the Oak Ridge location in 2021. She enjoys partnering with her coworkers and patients to provide support and problem-solving through diabetes education.


Sarah is a Knoxville native and loves the beauty of East Tennessee along with its mountains, music, and culture. In her free time, she has fun spending time with her husband, children, and basset hound. Her favorite times are quality time spent with family, friends, and extended family, as well as quiet time reading a good book, sitting by a fire, or listening to music.
